There is a hut up in Vermont they call the Setting Sun. The location is idyllic, the view is zen. Your welcoming host is scholarly about tea -- cultivation, preparation, and gustation.
We made a reservation for a tasting and stopped by as we breezed through the state. We chose to compare two unique green teas, a roasted bancha and a shade-grown, and then spent the next hour and a half in Ben's delightful and knowledgeable company, as he heated water to the ideal temperature for steeping our chosen tea.
I really liked how the proprietor has constructed a space inspired by Japanese tea culture but not beholden to it. The place hosts traditional ceremonies as well as informal tastings. The Japanese-style roof is supported by log beams hewn on the property.
