This past weekend, we visited Laurel Spring Cidery. After texting ahead, we were met by David, who introduced us to the cidery and then explained what the 1809 tasting was -- tastes of their three 1809 ciders, followed by a glass of our favorite. Of course, there was the obligatory keepsake taster glass.
Laurel Spring's ciders get away from being sweet and focus on the historical nature of cider. During our tasting David shared insights on cider-making and their plans. The initial orchard is visible from the tasting area, with plans to expand.
Our three tastes revealed the range they are planning on. The Red cider was done in the style of Basque cider. It's quite unusual and much tarter than I am accustomed to, with a lot of complexity. The Black cider was closest to white wine, though with some unusual funky notes at the end. The Blue cider had a sharp crisp flavor that extended into pepper -- though exactly which pepper has been a point of debate.
After the tasting, we were offered a tour of their production facility. David shared their journey and the ongoing evolution of their operations, from small beginnings to where they are now. This is a great time to become familiar with them before they become better known.

The cider is unique and fantastic; we happily bought some bottles to bring home. The Laurel Spring Cidery team has a very clear vision for this cidery and we are looking forward to following them along in their journey to becoming a must-go destination in the Happy Valley area!!! The property this cidery sits on is the icing on the cake (or cork on the bottle of cider :) The property is stunningly beautiful, with views literally as wide as the eye can see. The sun gave us two beautiful gifts during our wonderful stay: a beautiful sunset and a rainbow the following morning. We will definitely return to this cidery and we highly recommend a visit soon to anyone...

Our host, David, was incredibly friendly and knowledgeable about the cider-making process. He even made special mocktails for our children so they could feel included, which we really appreciated. It’s that kind of thoughtful hospitality that made the visit so memorable.
The cider itself was a surprise—in the best way! It was unlike anything I’ve had before, with unique flavors that really stood out. We tried the featured flight and enjoyed it so much that we took some home with us.
