Being a city slicker with a snobbish appetite for high quality urban eateries, I had very low expectations for Prinsburg, MN. I was in town for a job, starving before my drive back to the cities, I didn’t think there would be anything here worth stopping for. To that end, Lunchbox Cafe caught my eye, and it was quite a pleasant surprise. The establishment is very charming, clean, and tastefully renovated. The furniture you could say is a bit homey, but otherwise this kind of cafe wouldn’t be out of place in the metro. Staff was polite - I did not think they were rude or unfriendly at all, as pointed out in another review.
The menu consists of a typical rural lunch stop - a limited palette of burgers, sandwiches, maybe a soup and some sweets. No real espresso here either, and don’t expect fancy coffee. But the food was actually really decent! Nothing I’d particularly go out of my way to revisit if it were in the city, but for a small town, it certainly beats your average food joint. They use fresh produce and good bread, and everything is made on the spot. I was impressed!
