Bravo for opening up a restaurant during the pandemic and in downtown Salinas. And on that initiative alone, I would rate the place a five. The only reason I'm not is because my food came back with bacon in it (the first time it had bacon in the French toast, the second time the chef wiped it off but left quite a few of the bacon bits on the plate).
I ordered my dish with no pork. Pork is a major food in PR cuisine so, he [chef] may have assumed it was OK to just wipe it from the plate. But if religiously (I'm SDA) you don't eat certain foods and unclean meat is wiped off the plate instead of remade, it's an insult. Indeed, I didn't want any meat but I figured the dish was like chicken and waffles, famous now in restaurants in the south east of the U.S. I don't care for that dish either but wanted to see the differences.
Nevertheless, my comment alone implies you should give this restaurant a try. I rarely comment on food though I'm fortunate in that I eat at places all over America.
I recommend that the owner, who took my order - thank you - write it down on paper for the kitchen staff, because although he remembered my order w/o need of paper, the chef apparently forgot. Perhaps this was due to all the orders they were preparing.
Yes, the wait was long as others have noted but don't hold this against them. enjoy the atmosphere, strike up a conversation with the staff or the people next to you! The team is preparing the food much differently than most of the restaurants I've seen in PR. And there are way more options to choose from than you usually find in such a niche. So, it's gonna take a while longer to prepare the food.

The atmosphere when we arrived which was around 8am we didnt leave until 10, it was calm and relaxing, it is somewhere to go if you are not in a rush and want to relax. Things did take time to come out but we were not in a rush and enjoyed our time there. Ray was our server and he was very polite and bilingual. Everything was 10/10! I ordered a fancy latte of my own creation, White Chocolate, Pistachio, and Amaretto with Coconut milk.
