I finally got some time this week to a make a late lunch visit to Lonestar Sausage & BBQ in north Houston. And I’m sure glad I finally got here. Kevin Mason started this business many years ago. Smoking meats and making sausages was something he enjoyed doing with his father. Like many, it started out more as a hobby while working a full-time job as a Houston police officer. But the word got out on how good his smoked sausages were – so their popularity grew over time. Once he retired from the force last year, he decided it was time to open up a restaurant. And I’m sure glad he did. You can now find him on Walters Road about a mile and half south of FM1960.

When I got to the restaurant, an unassuming storefront in a quiet little strip center on the east side of Walters Road, I got to visit with Kevin for a bit before I ordered. And I’m sure glad I did. He shared that they had just introduced a new pepper jack cheese sausage. Given how much I love cheese, I knew I would have to give that one a try. And of course I needed to try some of his central Texas-style beef and pork sausage as well. I really wanted to try one of his east Texas hotlinks too – but they are so big that they make a meal all by themselves (they weigh in at ~1 pound each). I’ve already decided that next time that’s what I’m gonna order. For this round I really wanted to try the pork spareribs as well. I figured two different sausages and some pork ribs would be plenty of food. And boy I was right. That would have been plenty good – but because he is just a really good guy, Kevin brought me a couple rib tips and slice of smoked turkey to sample as well. That amount of food was totally crazy – it will likely be two or three meals’ worth – an incredible value for the money!

Lemme tell you – just looking at the incredible pile of smoked sausage and ribs, I could tell immediately that Kevin is an expert, both in making these sausages and in smoking them. They were flat out incredible, slow smoked over post oak.

I was so happy that as I was finishing up, I got the great pleasure and honor of meeting Kevin’s father. What a treat it was to meet him. Truly a kind and honorable man. End of the day, I am very impressed with Lonestar Sausage & BBQ. Kevin served this city of Houston faithfully for nearly thirty years. Now he is serving in a very admirable way as well providing the north side of Houston with some outstanding barbecue. Go see him. You will not be disappointed. Oh, and for what’s worth, on Thursdays Lonestar Sausage offers rib tips, and Fridays they do fried...

I tried this place a while back and did not have a good experience. I left a review and I’m guessing the owner got offended because he responded to my review as such. Today I had a chance to try them again unknowingly. I have to be honest there seems to be a lack of quality control. Again this bbq was not good., they should be ashamed to serve this to a paying customer. The sliced brisket pieces were either hard and dry or tough and gummy. Making it very hard to cut with plastic utensils, and even harder to chew. The chicken was tough, undercooked, and lacked flavor. The sausage and turkey were ok nothing to boast about. The potato salad was good, but the green beans were too mushy. The mac n cheese was bland. I did not like the gooey texture, and I bit down on a piece of bone that was in my mac n cheese serving. It was a reason my first review was less than flattering and I didn’t come back. Once I found out this bbq meal was from Lone Star bbq I knew why it was not good. There are so many other great bbq spots I’m guessing people don’t know about. After everyone ate the feelings and thoughts were unanimous it was not good, and no one fixed seconds or fixed togo plates. I really want them to do well, but they have to do better. The owner has to take constructive criticism to fix and address the issues that customers point out instead of snapping back on the reviews with snarky condescending responses. My original review is below.

Well I'll start by saying; customer service b+, wait time d. As for the food the star of the show are their sides, I just wish you got a bigger serving instead of a sample size with your plate order. The meats are ok but nothing to write home about. Brisket was moist, chicken was tender, but overall lacked that well seasoned, smoke flaver you get from a pit. Turkey was a processed butterball turkey from your local grocer deli. The sausage says homemade, but obviously not homemade in house. Tasted like regular processed store bought. I also think I was shorted some meat. I got the. Big Texan 4 meat plate for $22.66, and a Big Texan 2 meat, but only recieved 2 meats on my 4 meat plate. So it seems they need to fix their online ordering because the 3 meat as well as the 4 meat only allows you to select 2 meats. Really feeling cheated and beat out of the additional $5 you pay for a 4 meat with only reciving 2 meats plus the tip. Hope they do well, and work out the kinks at their location, but I don't think...

Lonestar Sausage and Bbq diner on Walter’s road was a disappointment for me and my wife when we went there Wednesday, June 19 around the three o’clock hour. Customer service from a woman employee of the diner was rude and a lot of attitude behind every remark. What really made this bad was :This was me, and my wife’s first time at the diner we were referred to it because of the food that a friend of ours had told us about so we came to the diner looking to buy a lot of takeout. I could tell the woman had an attitude before we even got to the diner because my wife called and I was listening as she talk to the woman over the phone. The woman had an attitude over the phone, and when we got to the diner, I can tell that she still had an attitude. When we pulled up to the diner, I noticed through the glass doors a woman standing looking out of the doors. she saw when we pulled up and got out the truck and headed towards the glass doors which was locked by the way, we didn’t know that the doors to get into the diner was about 5 to 6 feet adjacent to these doors . But even though she saw us getting out the truck and coming to the lock doors, and even pulling on the door, she not once tried to stop us and tell us to go to the other doors she was standing there with a angry look on her face, just looking at us through the glass doors. This was the second time I’ve overlooked the bad attitude as we proceeded on to the entrance. Immediately, after entering the diner my wife went to the bathroom. I then proceeded to order; by the time my wife came out of the bathroom I had just finished ordering. But my wife wanted to add something to the order so she Proceeded to tell the woman to add additional items to the order the woman told my in the rudest way with an attitude that she can’t do that and from there the woman began chiding angrily about how she asked us was that all and with that and a lot of attitude and rebuke from the woman I told my wife let’s go we don’t have to take this or spend our money after customer service of this magnitude. That was my first time in my last time coming to Lonestar, sausage...

BBQ places in Houston have been receiving nationwide press, but black-owned Q joints rarely receive the attention they deserve. They define what makes Houston BBQ distinct from the rest of Texas. Some spots manage to bring the soul of East Texas into their pits more than others. Those are the ones that rank highest on my list, but sometimes, I just want BBQ like we used to always get from places that once were found everywhere around 3rd Ward, Southside, Acres Home, and the Fifth--BBQ Done Right, Powell's, Green's, Two Brothers Smokin' Oak Kitchen, Byron's Gourmet, Williams Smokehouse, Kozy Kitchen, Triple J's, Reid's, Pierson & Co....those are just a few of the ones I can remember. You can still find this style at Burns and Ray's, but so many of the legendary places have closed. One spot that still puts out the goods is way up in North Houston-- Lonestar Sausage & BBQ (13712 Walters). Here, Big Kevin, who learned much of what he knows from working with Rayford Busch at Ray's, carries on the traditions of deep East Texas, including one of my favorite of all treats--juicy Beaumont-style homemade beef links. Often referred to as "grease bombs," these babies are usually packed with garlic (not so much here at Lonestar) and bursting with gut-juice, you can't get these anywhere but this part of Texas. Sometimes, you have to squeeze the good stuff out on bread or a cracker (or just straight down the hatch, like I do), but Ray's uses an edible casing. This is a spicy delight and flavor that I simply have to have every so often (usually many days in advance of visiting my always suspicious and persnickety doctors). I've ordered the sausage plate every time I've come here, but on this visit, a sliced brisket plate arrived with excellent potato salad and garlicky green beans. Kevin immediately noticed my slight dismay (though the brisket is excellent!) and rushed out one of those gorgeous, juicy links. As usual, there were no leftovers.
