Tonight, I tried the pork ribs and again, I'm blown away by the flavor and quality of food at Smoke Theory BBQ!! People in the restaurant industry know the commitment it takes to be successful. Kyle and Beth take it to the next level as they serve this business, their neighbors, and travelers on the Santiam Highway.
Amazing!!! Traveling a lot of miles for work, I have too much experience with food trucks, but this one is now at the top of my list. Sad to say, I've driven by too often in a hurry and will now be planning future trips around this being the 1200 destination. The pork belly bites were better than any restaurant I've ever eaten them at. Melt in your mouth pulled-pork, great beans, and BBQ sauce that fills the bill. I highly recommend you put this on your list to visit as you go through the Santiam Canyon. Seating is a fair-weather event, but if it is dry, the tables are a nice break. Good portions don't matter if the food sucks, and that is not an issue here. Their meats offer a great blend of smoke and flavor with perfect tenderness for the specific meat. I had the brisket and burnt ends with coleslaw and Mac. The brisket was thickly cut with great bark. It was good by itself but preferred it with the sauce they provided. The mac and cheese and coleslaw were fine and they complemented the meat well. However, I did feel like the portions on the sides were small. The burnt ends were the star.
