I was a manager in a Mexican Restaurant chain in the late 80's so I know the general process of these type of establishments - most items are prepared ahead of time and in a steam table so the preparation of the dish should be rather quick. In our case it was over 20 minutes from our order to our food and the establishment was not busy.
The salsa served with the chips was not what we expected (chopped tomatoes, onions, green peppers, cilantro, etc) but was thin and very spicey (we were advised of that)
We both had Enchilada's (1 Red Sauce - 1 With Green sauce)

The nachos, great flavor, loaded with rich toppings, had a few super crisp carnitas wedges, and chips had a hearty crunch. The empanadas (2) with carnitas were rich, stuffed with filling, and could easily cover a dinner plate. The burrito with chorizo was well portioned, stuffed too the brim, sided with smoky black beans and rice, the flour wrap was light but strong enough to hold the tasty contents, and was well seasoned.
No review on the guacamole but my better half said it...
