I've been to the Hub twice. The first time Inhad the beet salad and then smash burger along with a couple of whiskey drinks.
The service was good. The view was beautiful. The food is where there is a bit of opportunity.
The beet salad. This was outstanding! I will go back for this alone! Although at $16, it's a bit overpriced. Beets and Arugala aren't high ticket items. This should be $12, at best.
The smash burger. A lot of bun for an overcooked, very thin patty. Fries, slightly soft, could have been cooked a little longer. Not the best value for the price but it was tasty. This should be a double-patty for the price and to compensate for the thinness of the burger so you don't have so much bun.
I also had the fish and chips and again, the portion of fish was dismal. Three tiny strips, albeit hand battered but anemic portion of fish. You can get much bigger portion for the price elsewhere.
The drinks... OMGosh these are overpriced! You can drink elsewhere for much less and get a better pour for sure!
I give this place a solid 3.5 because of the sweetest people working there and the beet salad.
Opportunity to better price the food and drinks or give better portions should be considered by management/owners.

The worst fish and chips I've ever had, $7.00 draft beers, the highest in Pierce Co. and cheap wine pours. Also the worst in Gig Harbor. My granddaughter had to order an adult hamburger, because child menu is only a plain hamburger, no lettuce, tomato, onion etc. Each is $1.00 extra. Huh?? This used to be a destination spot when we had our grand-kids, but what a decline! At the end of the meal the wait staff brings check on handheld device and waits impatiently while I look it over. Told her to print copy so I could review it and bug off. $90.00 later (for bar food) with 1 shared meal........ never never again. All the ingredients are very high quality... the pickles ain't just Vlasic or Claussen; the brioche buns were perfect and didn't crumble apart, and the red onion relish was superb and really put it over the line. Oh, and the beef patty was tasty, moist and had a perfect caramelized, Maillard crust to it.

I got a chance to try some pizza, the dough was definitely up there with what you'd expect from a proper Italian restaurant with wood fired oven. Appears to be a high-hydration dough proofed for a good amount of time... likely overnight.
Don't get me started on the fries and tots, sensory overload...Perfectly seasoned and fried with a super dry, crisp, crunchy exterior... interior is moist, fluffy potato-y goodness.
My only criticism is that I have to drive just over an hour to eat here, and they won't let me just live out front of the restaurant in a camper van : (
