My recent visit to Coyote Flaco in Williamstown was an absolute delight! Located at 505 Cold Spring Rd, this family-owned Mexican restaurant offers authentic cuisine, warm hospitality, and a cozy atmosphere that feels like a home away from home.
Walking in, we were greeted with genuine warmth and seated quickly in the vibrant dining room, decorated with colorful Mexican art, is perfect for any occasion—be it a casual dinner, family gathering, or date night.
The menu boasts traditional Mexican and Spanish dishes with a South American flair. The Coyote Guacamole was a standout—freshly made, served in avocado shells, and bursting with bright, zesty flavors. It’s hands-down some of the freshest and most delicious guacamole I’ve ever tasted, perfectly paired with their crisp, house-made tortilla chips. The salsa fresca, packed with cilantro and onion, was so good we nearly finished it before our mains arrived!
For entrees, I savored the Fajitas Coyote, with tender, well-seasoned chicken and shrimp sizzling on a hot plate, elevated by a rich, unique sauce. My partner’s Enchiladas Suiza, filled with chicken and topped with creamy sauce and melted cheese, was equally fantastic. The refried beans and rice were standout sides, showcasing the kitchen’s attention to detail.
The margaritas, made with fresh lime juice and a choice from their impressive selection of over 80 tequilas, were the perfect complement to the meal. For dessert, we shared the flan—a silky, caramel custard that was a sweet, satisfying end.
The prices at Coyote Flaco are incredibly reasonable for the quality and portion sizes. Every dish felt like a great value, especially given the fresh ingredients and care put into the preparation. The service, led by owner Galo and his family, was exceptional, making us feel like honored guests.

Read moreWent here with my wife, daughter and son in-law to celebrate my daughter's birthday, arrived on time for the reservations and waited 15 minutes for the very unfriendly and some what confused hostess who had no apology for the wait. The hostess asked our name to verify our reservations and told us we already arrived and was seated, I informed her that she had given our reservations to the wrong party and received a "deer in the headlights look" from the year it hostess, this problem finally got straighten out. Now at the table we waited another 20 minutes for someone or anyone to take a drink order and provide water for the table finally by who we believe was the wife of the owner. Drinks and apps were ordered and it was another 15 minutes to get our drinks, at this time she took our food order and disappeared the apps came out and were disappointing. After a total of an hour the food was served but only 3 of the 4 dinners were served and was informed by the waiter the thr other dinner would be right out ( another 10 minutes). The food was nothing to right home about, it wasn't bad but it wasn't good either. No one ever came to check on us or to refill the water glasses after 2 requests. The owner popped by just to give us the bill and never asked or apologized for the poor service. And, the food is the best Mexican/Spanish food I have had in Berkshire County. The only food that compared was years ago when I ate at an elegant restaurant in Mexico. Also, Coyote Flaco utilizes a gourmet presentation..which I love. They were very busy tonight though..so the service was extremely slow. We didn't say anything but a couple seated nearby kept complaining and asking where their food was. And, my only other complaint is this mask business. My husband & I are elderly so..we have had 2 jabs with the Covid vaccine..plus a 3rd booster as well. We don't want to have to continue to wear masks. I would rather the restaurant ask us for our vaccination cards..than make us wear masks. I wish you would give customers a choice of showing a vaccination card OR wearing a mask.
