番薯(學名:Ipomoea batatas,英語:Sweet potato)亦稱地瓜、山芋、紅薯1]、甘薯[2]、甜薯、紅苕、紅芋、番芋等(注意:若稱為甘薯或甜薯,會與甘薯 (薯蕷屬)混淆),為旋花科番薯屬的一種常見多年生雙子葉植物,草本,其蔓細長,莖匍匐地面。
番薯一詞也單指其塊根;塊根無氧呼吸產生乳酸,皮色發白或發紅,肉大多為黃白色,但也有紫色(紫薯),除直接食用外,更可以用作製糖、釀酒及製備酒精。

原生種番薯生長並馴化於中美洲或是南美洲。[3]於中美洲,馴化番薯的考古證據可上溯至少5000年前,[4]而Ipomoea batatas的起源地可能介於墨西哥猶加敦半島與委內瑞拉奧利諾科河河口之間。[5]栽培種番薯最可能是由當地美洲原住民於西元前2500年代傳播到加勒比地區與南美洲。[6]
此外,玻里尼西亞在歐美探索者到來前就已經有番薯生長(英語:Sweet potato cultivation in Polynesia)。[7]根據碳定年,庫克群島的番薯可上溯至西元1210到1400年代之間。[8]番薯在西班牙統治期間被西班牙商船船隊與其他新世界作物(英語:New World crops)一起引進至菲律賓。[9]
番薯透過與菲律賓的貿易傳入中國,時間約在16世紀末葉,明代的《閩書》、《農政全書》、清代的《閩政全書》、《福州府志》等均有有關記載。
1563年(明朝嘉靖四十二年)之前,中國雲南已經引種甘薯。李元陽《大理府志》(嘉靖1563年)卷二,列舉「薯蕷」之屬五:「山藥、山薯、紫蕷、白蕷、紅蕷。」[10]這其中就提到紫薯(紫蕷)。11年後李元陽在他主撰的萬曆1574年版的《雲南通志》裡更紀錄全省9個府和州已經有別於「山藥、山薯」的各種顏色的「蕷」的種植。可見甘薯由印緬入滇應較由海路入閩,以及較由陸路從安南入廣東,要早至少二三十年。但無證明該物種為番薯,如徐光啟《甘藷疏》:「薯有二種:其一,名山薯,閩、廣故有之;其一,名番薯,則土人傳云:近年有人,在海外得此種。海外人亦禁不令出境;此人取薯藤,絞入汲水繩中,遂得渡海。因此分種移植,略通閩、廣之境也。兩種莖葉多相類,但山薯植援附樹乃生;番薯蔓地生。山薯,形魁壘,番薯,形圓而長。其味,則番薯甚甘,山薯為劣耳。蓋中土諸書所言薯者,皆山薯也。」
1582年(明朝萬曆十年),東莞人陳益從安南首先引入廣東[11]。
1593年5月(萬曆二十一年),《金薯傳習錄》記述:明朝萬曆二十一年5月下旬,福建長樂縣華僑陳振龍冒著生命危險將紅薯從呂宋帶回中國,試種後,「甫及四月,啟土開掘,子母鉤連,大者如臂,小者如拳」,時值福建饑荒,福建巡撫金學曾大力推廣,並撰《海外新傳七則》[12[14]多部史料皆載「番薯,明萬歷中閩人得之外國」如周亮工《閩小記》、黃叔璥《臺海使槎錄》〈赤嵌筆談〉、 余文儀《續修台灣府志》...
