Caymus Suisun in Fairfield offers a beautiful and modern setting to enjoy a wine tasting experience. The sleek and stylish interior features floor-to-ceiling glass walls, allowing for an abundance of natural light and stunning vineyard views. Seating options cater to various preferences – high-top tables for a social atmosphere, comfy couches for lounging, and traditional chairs for a more formal feel. The high ceilings add to the spacious feel, making the entire indoor space bright and inviting.
For those who prefer al fresco dining, Caymus Suisun boasts a lovely outdoor patio. Abundant couch seating and strategically placed palm trees create a relaxed, tropical vibe. Unfortunately, during our visit, they were only doing indoor tasting due to hot weather.
The tasting experience itself was enjoyable. For $50 per person, we were treated to a selection of five wines, encompassing both whites and reds. Our knowledgeable sommelier expertly guided us through each selection, explaining the origin, grape varietals, and flavor profiles.
Our first tasting was Mer Soleil (2022 Chardonnay Reserve Monterey County). It had a richness balanced by bright acidity. It had intense aromas of custard and toasted almonds and rich fruit flavors with a hint of lime.
Our second tasting was Emmolo (2021 Merlot Napa Valley). Sourced from the vineyards in Napa Valley, this wine had expansive, dark berry flavors, a fresh earthiness, and smooth, leathery tannins. It was my favorite from the tasting menu.
Our third tasting was Red Schooner (Voyage 11 Argentina). This was our least favorite of all the tastings from their tasting menu. Made from the grapes grown in the Andes Mountains of Argentina, this Malbec was not as smooth as I had expected.
Our fourth tasting was Caymus Vineyards (2021 Cabernet Sauvignon Napa Valley). This Cabernet Sauvignon was supple, dark and rich.
Our fifth tasting was 2019 Cabernet Sauvignon Napa Valley, which, as expected, tasted better than the 2021 Cabernet that we tried earlier.
We were celebrating a friend's birthday, and the staff truly went above and beyond by gifting her a complimentary bottle of wine. This thoughtful gesture added a personal touch to our experience. Another perk – a complimentary coffee station near the entrance allows you to grab a pre-tasting pick-me-up or a post-tasting caffeine boost.
Here's a great deal for wine lovers: the tasting fee is waived entirely with the purchase of any bottle over $50. Considering the quality of the wines and the enjoyable tasting experience, this is a no-brainer!

My friend was visiting from New York so she wanted to visit a winery during her short stay. She reserved the private tasting room because we had a larger party and it started off very nicely. The staff at the winery was wonderful and very accommodating because our party was running a bit late. Excellent customer service from everyone EXCEPT our server, TROY, which is the reason I am giving this location one star.
During the tasting, she told us we can freely roam around but “don’t go too far so I don’t have to come look for you for the next pour.” I was a bit taken aback by that comment but didn’t think much of it. Everything was going well until the end when the bill came. My friend jokingly asked her to waive our tasting fees because we purchased many bottles of wine. He said in a joking manner the Napa location usually does that. Troy’s demeanor changed, she was not having it. She got very serious and said Napa’s location serves different wines and don’t offer charcuterie. I asked if she can waive the $25 fee for my friend who didn’t participate in the tasting. This is when her attitude turned hostile. She clapped her hands in my face when talking which was uncalled for. In retrospect, I should’ve asked to speak to a manager right away after her disrespectful behavior but I was still in shock. This is after our group purchased about 10 bottles from her too.
