Nothing wrong with the meat at all. Great flavor and pretty good marbling considering the steer was light in weight. My biggest issue is with the processor. I have used about 6 or 8 different processors over the years and the one that they use is by far the worst. First of all, the cuts they come up with are nothing like I have seen before. Steaks have many small bones because they were not cut correctly and second, the vacuum sealing is the worst I have ever seen. Nothing is under vacuum 3 months later. I am having to reseal almost everything to keep the meat from burning. Also, I don't believe they even look at a cut sheet as just about the entire order was not cut and prepared according to the cut sheet I provided to them.
