Château de Fiac Hôtel & Spa — Hotel in Castres

Gourmets rejoice! Fans of brilliant chef John Courtis who were mourning the closure of his restaurant Chez John in Ambres can find him once more at the prestigious Renaissance Restaurant in the newly renovated Chateau de Fiac, and find him we did last week when we finally managed to get a booking (we had tried twice without success – early booking recommended). ||||We chose different menus both top class, consisting of high-quality produce, perfectly cooked and beautifully presented. One of the things that makes John’s cuisine so special is his creative flair and inventiveness in marrying different flavours, so there’s always an element of excited anticipation as you order the aperitif and wonder what you’re going to get for the delicious hors d oeuvres and mises en bouche. My menu started with a melt-in-the-mouth Bavarois de champignons, followed by a filet de turbot. This was accompanied by a shellfish ‘jus’, and a ballotine of Swiss chard whose delicate aniseed flavour was the perfect counterpoint for this rich and flavourful dish. My French table companion, after polishing off his entrée of foie gras, started on his fish course (salmon and mussels served with a creme dieppoise). After the first mouthful, his eyes widened, he looked at me, then uttered a single word "Divin…" He'd hit on the right term to describe the whole experience – outstanding cuisine, courteous and attentive personnel, a beautiful chateau – it was indeed divine. An absolutely gorgeous chateau hotel. I found Chateau de Fiac on Google Maps and decided I had to find a way to fit it into my itinerary in the mid-Pyrenees, and I would highly recommend others do the same. The chateau itself and the surrounding landscape is beautiful. The common areas of the hotel are very enjoyable, relaxing lounge areas, lots of outdoor space and a modern infinity pool. Upon being shown to our room my every expectation was surpassed, it was such a lovely space with every single element of the decor beautifully picked. The bathroom was my personal favourite, it was heavenly to have a bath looking out at the view. We spent 3 days here and ate at the hotel for breakfast and dinner each day, and I could easily have done the same for many more days. The breakfast is a varied buffet spread - I could only make a suggestion to the hotel that it could be good to consider offering a short menu of a la carte hot breakfast options to order. J'ai récemment passé une journée inoubliable en famille à l'hôtel spa, et je ne peux m'empêcher de partager mon expérience fantastique avec vous. C'était une journée de détente absolue, où nous nous sommes fait choyer avec des massages apaisants et avons profité des magnifiques installations aquatiques.

Dès notre arrivée, nous avons été accueillis chaleureusement par le personnel amical et attentionné de l'hôtel spa. Leur professionnalisme et leur souci du détail ont instantanément créé une atmosphère de sérénité et de bien-être. Les installations étaient d'une propreté impeccable, créant ainsi une ambiance propice à la détente.

Les massages que nous avons reçus étaient divins. Les thérapeutes étaient extrêmement compétents et ont su adapter leurs techniques en fonction de nos besoins individuels. Chacun de nous est ressorti de la séance avec une sensation de soulagement et de relaxation profonde. C'était une véritable expérience de bien-être pour le corps et l'esprit.

La partie aquatique de l'hôtel spa était tout simplement incroyable. Nous avons passé des heures à nous prélasser dans les piscines chaudes et à profiter des différents jacuzzis. Les installations étaient luxueuses et offraient une vue imprenable sur les environs. Nous nous sommes sentis complètement revigorés et rajeunis après avoir profité de ces installations.

En plus des traitements et des installations, l'hôtel spa offrait une atmosphère paisible et relaxante. Les espaces communs étaient décorés avec goût et invitaient à la détente. Nous avons également apprécié le service de restauration qui proposait des plats sains et délicieux, parfaits pour compléter notre journée bien-être.

Dans l'ensemble, notre expérience à l'hôtel spa a été tout simplement extraordinaire. Nous avons été impressionnés par la qualité des services, l'attention portée aux détails et l'atmosphère générale de calme et de relaxation. Nous sommes repartis avec une sensation de bien-être profondément ancrée en nous, et nous avons hâte de revenir pour profiter de cette oasis de détente.
