I went to Kasos’ tours estate (a short walk from Panagia, but I was also offered to be picked up), and was received by Maria and Nina, the two ladies who taught us how to cook local cuisine. We made fresh bread on a Kasos clay oven, makaroni with sitaka (a local pasta with a local goat/sheep cheese) and caramelized onions, and xylokopites (fried dough) with honey for dessert. Read moreI took the tour of the main 5 towns on the island early on in my visit to Kassos so I could go back to see more of any I liked. Panaghiotis was my guide and he has lived on the island many years so he also explained the culture and way of life on the island. He was very knowlegeable and informative. It was a combination of walking and driving. We went to the cave and a nearby dairy where the owners showed us around and also gave us some yoghurt to cool down with.
