Arrived 11:50am Saturday afternoon, and was seated around 12:50pm.

We ordered the Black Wagyu Bukkake Udon.

The noodles don't have the usual Sanuki udon bounce. The texture is hard to describe. It's like a sinewy mochi: the initial bite is soft, but difficult to chew. With the usual Sanuki udon, you savor each chew. But chewing the udon here is a chore. Unless you're confident in your jaw strength, I don't recommend ordering a large serving. I wouldn't be surprised is the consistency of the noodles plays a factor in the long wait time as well.

As for the overall taste, it's good. The broth is satisfactory, but the beef was the star of the show. But it's not enough to justify the long wait time and the hype.

As for positives, the staff are very nice and hardworking, and the kitchen is very clean.

If you have all the time in the world, and want to test your jaw strength. For most, look elsewhere if you were expecting an other...

Wow. At first I was asking if it was worth it to make this detour on the way from Osaka to Kyoto, walk 1 km, and then wait 20 minutes in line just to eat udon. I am glad I did. This is an unassuming spot that is in the middle of farm country in a village. It is also the #1 rated spot in Japan for udon according to multiple foodie sites. The owners moved the original location here to be closer to a particular water source that produces the texture of the noodles. Think NYC bagels. That same attention to detail is put to the balanced broth, the eggs with Mandarin orange colored yolks, and the fluffy/crunchy tempura... This is Michelin star/5 diamond type dedication in a maybe 20 seat resto that is absolutely packed with locals and Japanese foodies. No other dish we had in 2 weeks compared to this one simple lunch, and it ruined every other noodle...

Completely delicious and worth the hype. The care they put into the food is apparent in the taste and presentation. Very nice atmosphere inside, too!

Unless you're confident in your jaw strength, I don't recommend ordering a large serving. I wouldn't be surprised is the consistency of the noodles plays a factor in the long wait time as well. As for the overall taste, it's good. The broth is satisfactory, but the beef was the star of the show. But it's not enough to justify the long wait time and the hype. As for positives, the staff are very nice and hardworking, and the kitchen is very clean. If you have all the time in the world, and want to test your jaw strength. For most, look elsewhere if you were expecting an other worldly experience.

Completely delicious and worth the hype. The care they put into the food is apparent in the taste and presentation. Very nice atmosphere inside, too!

Wow. At first I was asking if it was worth it to make this detour on the way from Osaka to Kyoto, walk 1 km, and then wait 20 minutes in line just to eat udon. I am glad I did. This is an unassuming spot that is in the middle of farm country in a village. It is also the #1 rated spot in Japan for udon according to multiple foodie sites. The owners moved the original location here to be closer to a particular water source that produces the texture of the noodles. Think NYC bagels. That same attention to detail is put to the balanced broth, the eggs with Mandarin orange colored yolks, and the fluffy/crunchy tempura... This is Michelin star/5 diamond type dedication in a maybe 20 seat resto that is absolutely packed with locals and Japanese foodies. No other dish we had in 2 weeks compared to this one simple lunch, and it ruined every other noodle resto for me.
