I am at a point in my bread baking journey where I want to explore ancient and heritage grains. I happened upon Janie's Mill as a reference in one of my books (Evolutions by K. Forkish). My experience with my first order to Janie's Mill went much better than I could have ever expected it to.

Vickie was exceptionally helpful and patient with me when placing my order. I appreciated her insights in helping me with selecting items to optimize my order. I placed my order on a Friday afternoon and received it the following Tuesday morning. All items were packaged extremely well.

I believe my purchases are of exceptional quality and fairly priced. I am anxious to try my "new" flours. The "Sourdough Artisan Blend Bread" will be coming up to bat in my next bake.

As a baker and first-time customer, I don't know as anything could have gone better with my first experience doing business with Janie's Mill. I won't hesitate ordering again from Janie's Mill. We may stop in to visit the next time we go through North East Illinois.

It is rare for me to be "wowed" doing business with any company. Janie's Mill did exactly that and in such a refreshing manner. The folks at Janie's Mill set the bar quite high. I am confident they will keep the bar up there!

Update: I wanted to learn more about the ancient and heritage flours and grains that took my baking to the next level. My wife and I attended a scheduled tour of the Janie's Mill operation. Our tour guide (Sandy) was welcoming, knowledgeable and very comfortable in front of a group of folks. The entire staff seemed to enjoy our being there and went out of their way to answer all of my many questions. We brought an impressive amount of flour, grains and books home with us!

I've been a baker for nearly 60 years now! I am a Type II Diabetic and quickly realized that MOST of the All-Purpose Flour available is Unenriched and Bleached Flour. Which means it's "Saw Dust" No Nutrients and BAD for Anyone! About 10 years ago, I began purchasing flour that was NOT ENRICHED AND UNBLEACHED! This made a HUGE difference in how my body responded to the carbs and I knew I was on the right track. But there wasn't much variety in the grocery stores even in the healthy level.

When I found Janie's Mill I was very impressed with the website and the information they shared in detailed about ALL the areas of the business. I especially was drawn in from the "High Protein Flours" they produced and that they grow various varieties of wheat/grain right here in Northeastern Illinois!

I can say that I have NEVER tasted such DELICIOUS bread products in my life! The quality of their Milling and the variety of flours they produce are simply a "God Send" to someone life myself!

And EVERYONE can taste the difference and quality in my baked goods! I still have to watch my portions as a Type II Diabetic, but it is so refreshing to have a homemade cinnamon roll or bun and not have it spike my sugars! I can enjoy a portion and am so THANKFUL for that portion I can now enjoy and not have it affect my health!

Thank You Janie's Mill for what you are doing right here in The Land of Lincoln and providing such Healthy, Nutritious, and Delicious Flours!

The flour this mill produces is absolutely marvelous to work with! I am a Type II Diabetic and the products Janie’s Mill provides, allows me to make and consume grain products that have nutrients and high protein and lower carbs! It is not easy to find unbleached, unenriched, flour in the grocery! And if you do, it’s very expensive! For years, this has been the problem they took out all the nutrients and just added filler products!

My first batch of bread was making a sweet dough recipe for a pizza crust and a loaf of bread! I used a combination of the sifted Durham flour, and the high protein flour! The result was wonderful! And the taste was Amazing! I cannot believe the difference in flavor when you get honest to goodness real flour! Not only do you smell the grain you can taste the goodness that comes from it! And I can enjoy delicious grain products in my diet again!

One thing for sure, you get what you pay for, and you are getting quality, organic, honest to goodness flour! They do have lower gluten grains! I like the fact that their website continues on with the experience and shares recipes and knowledge in using the different types of products they offer! I am so happy that I have found these folks! 100% Sourdough Rye Bread with Little Annie, My Starter Born during the Pandemic My mother's side of the family lived in Germany and grew rye on their very large farm until it was taken away during WWII. It has been both an honor and a blessing for me to bake sourdough rye breads, rolls, pizza crusts and more for my mother and my hubby who also spent a great portion of his life eating from German bakeries. My mother is 89 now and my sourdough breads have brought her back to her childhood memories of bake day in the woodfired oven and life on the farm. Had I not started baking, I never would've heard the ol' farm stories that she now shares with me. Bread really is the Staff of Life. I'm grateful for farmers like the Wilkens brothers carrying on this way of life. I'm sure that thier history is as intriguing as my own. So many stories to tell.... The ORGANIC rye berries I received were great and the price was right. Many other products to choose from too. I gladly support organic farmers and all that they do to keep the organic movement alive!

We operated an artisan bread bakery that unfortunately didn’t survive COVID. We had to close our doors in 2022. We only used flours and grains from Jamie’s Mill. We received so many compliments on the flavor and nutritional values of our products!!! The flours are the best we have found anywhere. Now that we’re closed, I’m back to ordering from the retail side as I continue to bake my breads for family and friends at home. If you want truly exceptional flours and the best outstanding customer service, you have to use Janie’s Mill! If you’re not, you’re really missing out! Harold, I miss our chats while we unloaded the truck. But I’m so glad for everything you, your family, and the team on the farm and at the mill have accomplished!! Keep up the great work and I’ll continue to tell everyone to get their flour from Jamie’s Mill!

Have been experimenting with breading with the ancient grains. Einkorn bake turned out great and not knowing too much about it, saw superior nutritional values in combo with a subtle soft nutty flavor. Sliced warm, it begged for some Irish butter. Later, when the bread cooled, it begged for a tuna salad pairing which was awesome! Sorry, not a pro at all, but play with these for nutrition and taste. Also, have combined the rolled oats, rye and barley for awesome hot "oatmeal". Superior when served warm with maple syrup and buttermilk the way great-granddad Vincent from Kentucky ate it. But now we eat it that way and these different rolled grains give that slight chewyness to it that I crave! It would be good to get some steel cut capabilities, as that kinda adds to the "berry" aspect of the hot cereal ala McCanns. No hurry - so good the way it is!
