Wow -- we had been meaning to check out the Mukja food truck for a long time, and we finally did. So happy we did -- the food was wonderful. We tried just about everything -- the bibimbap (with sweet potato noodles instead of rice!), toekboekki chewy rice cakes (a favorite!), a scallion pancake rolled into a burrito-like wrap with a spicy chicken filling, and Korean street-food-style cheese dogs -- with cheese that stretches as you pull the dog away from your mouth. They use a beef broth that is rich, but doesn't subtract from the protein. The noodles are nothing special, but perfectly cooked. This is a top 3 CO ramen I've tasted coming out of a food truck. The Korean additions of protein and the cheese work great in this ramen to make it well flavored and cheesy (admittedly one of my favorite soups is Buddajiggae, containing lots of cheese). The cheese at its core was luscious and stringy and gooey and the fried exterior was crunchy and delicious.
It will lax its way off the stick if you eat too slowly. It's due to the weight of the cheese inside which is not a complaint at all!!! Just a tip in case.
