We had hired Chef Stuart for a dinner to celebrate our son's zoom wedding in the Hamptons. He brought everything we needed by way of food and plates etc. He was timely, energetic, and seemed sincerely pleased to be with us that evening. He was engaging and delightful to converse with as we all got familiar with him and each other. He worked real hard to prepare the meal and the table for us. The Appetizers were Tuna and Salmon Tartar in cones, cheese and charcuterie platter and clams casino. Each item was delicious. The presentation was great and crisp and clean with everything made at the house. Super fresh and just the right texture and quality ingrediants were immediately apparent from the initial tasting on. For each course this would remain true. The clams casino were done, what we consider, to perfection. NO BREAD! that would be a crime for true clams casino and they were broiled to the right crispness for the bacon and juices to be captured with the natural juice of the clams. I happen to cook these often and believe my version to be the best. These were just as good! All of the appetizers were fantastic and I would recommend you get them when you use him. I could not stop eating the delicious cheeses, especially the strong blue--oh, that was delicious. The next course of heirloom tomatoes and burrata with balsamic syrup, EVOO, and freshly made parmesan crisp. Again, the ingredients were great looking, fresh and delicious. He made the parmesan crisp right there and I love that when it is freshly cooked, still warm, and extremely crispy. The crunch makes it extraordinary with the rest of the course. The main course was a version surf and turf. It included pan roasted filet mignon with Diver Scallops, potato grain and sauteed broccolini. The filet was done to perfection. 9 of us there, and it seemed like everyone ordered it cooked differently , yet we all got it exactly as desired. The Scallops were browned and still moist and had the fantastic freshness of the local sea where they were from. Locally sourced clams and scallops are great in the Hampton area and these did not disappoint. Dessert was a fruit platter than no one, no one had room for. We used it for breakfast the following morning. The portions were substantial, the presentation delightful and intriguing, the food was as fresh as it gets and everything was made to the right temperature, texture, mixture, and amount. Chef Stuart really delivered the goods that night. I will say that as a restauranteur in South Florida, I am the tough critic to my own team. I've had the pleasure of enjoying Stu's food several times, but the time that is most notable is when he curated a dinner for 22 of our guests in our home for my husband's 40th Birthday. Since we hosted at our house, we weren't tied to a strict timeline or a restaurant's schedule, and the overall experience can't possibly be compared to a local restaurant. We were absolutely blown away by Stu's menu and each dish was over the top delicious. He delighted our guests with a four course meal that was perfectly balanced. Even dishes I don't particularly care for like butternut squash soup, was amazing! Stu had incredible communication through the whole process as we created a menu, considered serve ware, accommodated food allergies and ensured it was an enjoyable experience for all. During dinner, he paced everything perfectly so we had time to enjoy conversation between courses, nothing felt rushed. He was able to serve everyone all at once and the food was HOT! Something even restaurants typically don't perfect. He had great interaction with all our guests, explaining the dishes and carrying nice conversations. We felt completely spoiled and had the most memorable evening. All of our guest were blown away by the night and still talk about it to this day. We have friends that even booked dinners with Stu and have recommended him to friends and family. We felt very spoiled that evening and every time we have the opportunity to enjoy Stu's food. Read moreI can’t thank Chef Stuart enough for the amazing service he provided! I’ve raved to several friends and family about him and I will continue to do so! This was a small company retreat in a rented beach house for 10 people. The food, prepared and presented on the utmost gourmet level, was all very plentiful and delectable (we were easily able to go back for seconds on the appetizers)! The salad was so fresh, beautifully dressed and artistically presented in the cucumber bowls! The lobster in the pasta dish we chose was plentiful and perfectly seasoned. The filet mignon, our other choice, was a generous portion, cooked to perfection, and tender enough to cut with a fork! The Crème Brulee dessert we selected was a nice size and over the top delicious and the same for the chocolate lava cakes! Added as a plus was a big bowl of fresh whipped cream too!
Chef Stuart and his assistant Sergio worked so quietly and efficiently, we were literally a few feet away, having business discussions etc. and not once were we even slightly distracted by their preparations! The clean up was amazing too! When they left, the kitchen was totally cleaned up, dishwasher loaded, garbage taken out, and floor swept!
Add to that Chef Stuart's friendly personality and Sergio’s polite presence, and what can I say, it simply could not have been better!
