Bought a half a cow from the Sadler ranch out of Casper, first time with this outfit, and they used western heritage to process, also a first. Was told my half weighed exactly 300# hanging weight, which I found strange. Sadler family picked up beef and brought it to town, without doing inventory. All of the brats, jerky etc were missing. When I opened the boxes and saw the sizes of the tritip, the steaks (less than half a pound) prime, and brisket (2 poundsish) I could clearly see that this half was not 300 pound hanging weight (1000# live weight calf). This facility bills by the pound, as does the ranch, so by fabricating heavier numbers, both the meat processor and ranch make more money for services and product they didn’t actually provide.
