Perhaps the tour is great, but ultimately a distillery is about the whiskey it produces. Defiant Rye and Defiant Single Malt are 40+ dollar bottles of swill compared to your average whiskey on the market in the same price range. I understand being a small start up, but the product is just frankly bad. Nothing invented yet can replace time to age. Some, like Old Forester, can hedge it somewhat, but nothing replaces it. This distillery is selling a Single Malt at 40+ bucks a bottle that is aged 60 days. 60 DAYS!!!!!! That is just plain criminal and their supposedly proprietary new aging method is just nonsense when tasting the product. Swill tastes like chewing musty, soggy barley with regard to the single malt. Rye is only slightly better, but that is because rye itself is more forgiving with regards to taking less time to age. Our visit to Defiant Distillery , this morning, was an unexpected surprise!! We were welcomed by Eric, who provided us with an incredible tour , along with information on the history of whiskey making. Their unique method produces a very excellent product, as witnessed during the tasting. We were convinced that the smooth smell and taste was like nothing we’d ever had. My friend and I just made a visit for a tour and tasting. It is so wonderful to see and support a local business with its unique spin on whisky production. Our distillery tour with Eric was very personal and he gracefully and expertly fielded our barrage of questions. The tasting with Chris was equally enjoyable and the four whiskies we sampled each had its own unique character.
