Ā Ā Ā Read moreWe had high hopes for butchering at Country Village Meats - but overall I would not do it again. I brought in 6 pigs. My meat that I received as the owner was great! Good flavor, well packaged. However, my customers had VERY different experiences. All of them felt the front lady was rude, especially for those ordering pork bulk for the first time. I felt the same when I went in. Also - they forgot to cure and smoke a good chunk of the bacon (even though it was marked as such). I tried it after we purchased it (within a week or 2) and it was gross.
They also completely forgot to give one of my customers a good 40 lbs of meat, which they kept in the freezer for 6 months before they found it.
I have used multiple butchers in the area of Northern Illinois and Southern Wisconsin, never had an experience quite like this.
Ultimately, a few of my customers ended up taking their bacon back because it is so bad. The company did not stand by it and blamed us for not eating it.
And update - no the company did not...

After preparing the pork at home it has been the worst experience I have ever had in the quality of the actual butchering job they performed. The amount of fat left on bacon, left on butterfly pork chops and inconsistently of the ground pork; some lean and some very fatty sets a new level of disappointment. Bacon was supposed to be hickory smoked and it wreaks when cooked and some has been inedible. Maybe this is due to the amount of fat, only approx 10% meat on all bacon I have thawed to cook. Off 1# I had at least 1 cup of bacon grease and it smells so bad I would not save it and after tasting the bacon I had to trash it also. Maybe due to the situation of current affairs at that time influenced the quality of work, not sure. Just very disappointed and would never recommend this business...
