I hate to be the one to give such a poor review of this butcher shop but sadly that is what I must write. We drive about 3 hours each way to get to this butcher shop, we always place a large order, usually 500 dollars or more each time we come, and we always make sure that they are given enough time to not only fill the order but also to make certain that they have the items in stock. This time was no different but when we arrived this weekend our order had not been filled. This could have been handled very easily by simply stating they forgot about it or got busy and we would have gladly waited. Instead we were told that they were out of almost 3/4ths of the items that we had ordered so they would not be able to fill most of the order even if we waited. There was no apology. When I stated that we were disappointed by this because we drove 3 hours one way with only their destination to meet before we returned home and we would have appreciated a phone call prior to our departure if they were unable to meet their order obligations, we were told my the manager ( or who we were told was the manager) to give them a break, they were busy. Nothing more. Now, we are usually very agreeable people but to be dismissed like this, and in such a rude way, was not what I feel to be good business. As if our time, our money, our lives, and the time we took out of our lives to drive to their business in order to spend our money was not important either. We left, sadly, without purchasing any products really and I did not hesitate to inform all the other families that we have sent down to them over the years how different management is now currently. We do business with them roughly 9 months out of the year with a limitation on the other 3 months due to our own weather, but I no longer trust spending my time and money in their store if their attitudes have changed so...
   Read moreWe've always been pleased with the quality of the meat we get here. But this thanksgiving they outdid themselves.
We got a 9 lb Prime Rib for Thanksgiving (ordered it Monday and they had it by Wed). We seasoned it with garlic, pepper, and salt, let it warm up for about 1.5 hrs and then cooked it for about 3 hrs at 300(convection) until the interior temp read 120. Then turned the temp up to 500 and did a reverse sear for about 5 min which brought the temp up to 135.
When we took it out and it looked great, one end was a little overdone, more medium well than medium rare which was OK because it turned out a couple of guests liked it that way (Could have covered the ends and put temp probes there to make sure it didn't go over). We let it rest for about 1/2 hr as we finished up the rest of the dinner.
When we cut into it, even the overdone end was super juicy and tender, the flavor was amazing, and there was just enough fat to get the flavor there.
Can't say enough about how great this was, and it really came down to the meat choice since we didn't do anything special and even "messed up" a little. THANK YOU...
   Read moreTheir beef sticks and jerky are fantastic if you get the Old Fashion flavor or the Colorado. I'm 200 miles from them but every time I get up north Wisconsin or Minnesota I stop to get some. Problem is that the last 2 times they have been out of them. So I tried the Teriyaki sticks this time and the Bacon Cheese sticks. Bacon Cheese were great but they only had a couple very small end pieces of them ad well. The ateriyaki sticks didn't taste like Teriyaki at all. Tasted like a regular stick to me and my girlfriend as well. Needless to say I don't know if it's worth cutting a cross to Wisconsin just to go there anymore. We also just purchased a cabin in northern Wisconsin and I thought it would be great to be closer. But like I said, the last two times wasn't worth the detour. You would think they would be stocked up well especially for the weekend customers passing thru. I'll leave this post at that and hope they fix things, but honestly I'm not sure I'll be stopping anymore and especially detouring for it.
