Obviously, food is kinda my thing. Well, Cheese is my favorite food.
If you had told me yesterday that there was such a thing as a “perfect” cheese that encompasses all of my favorite things about cheese all in one magical chunk of deliciousness, I’d have never believed you. That was before I tasted Widmer Brick Cheese.
I’ve never been so excited about something in my life, much to the chagrin of my better half. As much as she also enjoyed this buttery, spongy, creamy piece of heaven on earth, if she has to hear me say the word Widmer one more time, or compare things on a scale from zero to Widmer Brick Cheese, or make her read me the Widmer story like a child’s bedtime story, she’s probably gonna kick me to the curb. But there’s a lot to be excited about.
The Widmer story is one of tradition and passion, and it shows. Of the many ways I enjoy eating cheese, which is basically on everything all the time.. cheese on crackers is my favorite. I’ll usually buy sharp cheddars for that denseness and bite, some softer pepper jack style cheeses, and the ultra soft goat cheese for the creaminess.
Widmer Brick Cheese encompasses all the things I like about each one of those, all in one thing. I dare say, to my taste, it is the perfect cheese. It’s like cheddar, jack, and chèvre all had a delicious baby together. It’s hard to even put into words. What’s so great about this cheese on crackers is the mix of the flavor and texture. I love a good cheese on a triscuit style cracker, but with sharper cheeses that are more dense, it makes for an awkward chewing thing happening in your mouth and becomes a bit of a burden to chew. The problem with some of the creamier cheeses with that type of cracker is that the crunch and texture of the cracker soaks in the cheese, so you lose the flavor. What makes Widmer Brick Cheese so perfect to me, is that the sponginess of the cheese soaks in the the cracker without getting lost, and almost becomes one, but the flavor is rich enough not to get lost in the cracker but still keeps the creamy buttery flavor in tact. It’s literally the perfect cheese for a triscuit you’ll ever try. The sponginess is like nothing I’ve experienced.
Before this endeavor, I didn’t even know brick cheese was a thing. But the lovely description on the package reeled me in, and what an excellent decision it was. “Brick cheese” was just something I had to try. And I was lucky enough to be at the only store within 100 Miles that sells Widmer cheese.
Now, I realize this is a review for their cheese shop in Wisconsin, to which I’ve never been, but surely will. But I wanted to write a review of their product because of how it has changed my life for the better. Now, I’m all in.

Read moreIf you buy anything online, expect surprises. I was looking for an aged cheddar and saw they had it. I used their site. At the cart, I put in my purchasing information. There was nothing in there saying how much shipping was. There was a button to move to the next screen, but not one that made it clear that you were finalizing your purchase. As there hadn't been a shipping cost presented, I had thought it would be like other sites that would present the shipping costs after you entered your payment information. The very next screen told me my purchase was complete and I discovered that it had put on over a $100 shipping cost for less than a pound of cheese. I have had live fish shipped over night to me in heavy water that cost half that amount. I immediately called the store, and before I could get a sentence out, a lady abruptly stated, "Look, I can't do anything to help you." When I started prying for information, she just kept ranting, "I don't know what to tell you. The people in the office aren't here. You're going to have to call back Monday." When I called back on Monday morning, I called three time. I was put on hold three times and never got any help. When I left to return to my home in Houston, TX, in September, I wanted to bring some of this cheese home for neighbors and friends. Unfortunately it would have weighed too much for airline allowance. Widmer's told me to wait until our weather, in Houston was 60 degrees or less for 7-10 days in order to have it arrive chilled. This is a challenge! We get the cooler weather but not for this long. I was glad I took the advice of Widmer's. My 19# package arrived today (shipped 3 days ago) in absolutely perfect condition.
