Schwai’s is a great meat market for old world sausage making!
I have known of Schwai’s for more than 45 years (when I was just a kid). From their days out near Slinger to their time in Cedarburg. This has been a family owned and operated business since its founding. Old man Schwai used to cook the wild game dinners at the Grafton Hotel where I was a dishwasher. He had an infectious sense of humor that his son (and now owner) inherited.
We have not lived in Wisconsin for over 30 years. But whenever we come back to the state or have people from Wisconsin visit us, we get Schwais’s brats and sausages to bring home.
If you want old world sausage making at its best with unique blends not found in the grocery store (kielbasa / ring bologna / blood sausage / potato sausages / hot sticks / summer sausage etc) - you must go to Schwai’s.
This is the real deal. Many butchers are good at making sausage. Schwai’s is exceptional at it — and has a genuine old world technique and smoke to their sausages that others simply cannot replicate.
Much of the building is dedicated to sausage making and meat processing / smoking. This is not a flashy or trendy store like so many try to be. It’s old world and all about the meats they produce. The sausages are large. One is nearly capable of filling 2 buns. So be aware of that. Ie. 6 brats is nearly equivalent to 10 normal size sausages.
