Restaurant: MASA My partner dragged me here, and at first I was like, “Pff, isn’t this just like Xinjiang lamb pilaf? What’s the big deal?” 🙄 But with the first bite of rice… I take back everything I said. 😶✨ The basmati rice was fluffy, delicate, and each grain stood apart — soaked in rich, incredible flavour. While Xinjiang pilaf shines with bold rapeseed oil notes, Afghan Kabili rice is more subtle — the oil plays a supporting role, gracefully highlighting the warm spices like cumin, cinnamon, and cardamom. The raisins and carrots woven through the rice add a touch of sweetness 🥕🍇, and the almond slices bring a lovely crunch 🌰. Paired with the tender lamb shank 🍖, each bite is a harmony of meat, fruit, rice, and spice — truly unique. In simple terms: It’s delicious! 😋 Though it looks similar to Xinjiang lamb rice, the taste is totally different. Xinjiang-style is richer in oil, has a stronger rapeseed aroma, and often includes more ingredients like yellow carrots, chickpeas, and raisins. The rice is firmer, and the spices are less pronounced. Afghan Kabili is softer, lighter on oil, simpler in ingredients, but much more aromatic.
