🇫🇷 Lyon Michelin Recommendation | Hidden Gem: Danton
Chef Benjamin Besse has worked in Michelin-starred restaurants in Lyon, Annecy, and beyond. In 2017, he opened his own restaurant, Danton, in this cozy corner. He loves braised dishes, like 36-hour lamb shanks and 50-hour beef. The flavors are on the saltier side, with rich, complex layers. 🍖 Today we enjoyed the autumn Complet menu: amuse-bouche + appetizer + main course + dessert + cheese + petits fours. I wouldn't recommend the appetizer Mousseline de carpe et de noix de coquilles Saint-Jacques. It looks and tastes like tofu—pretty bland. In contrast, the Crème de cèpes et crumble aux graines de courge had much more depth and was super delicious! 🍄 For the main course, we had beef and fish. Both were quite salty. If you prefer lighter flavors, I'd recommend the fish. The beef was super salty—haha. I think friends from Sichuan and Chongqing would love the beef and lamb shanks. The lamb shanks are only available à la carte and are a bit pricey. 🍖 The cheese platter 🧀 is arranged clockwise from mild to strong. If you can't handle goat cheese or strong cheeses, be sure to let them know when ordering. They can swap out or repeat cheeses for you. I thought the petit four, the financier, was a bit overdone—fewer air holes and slightly burnt. But the little cake was a delightful surprise! Danton... Restaurant Definitely need to book in advance.
