🍝 Bigoli al Musso (Donkey Meat Ragù): A classic Veronese dish—bigoli is a long, thick pasta cooked to a pleasantly chewy texture. 🍺Topped with a rich ragù made from donkey meat, carrots, onions, rosemary, and other herbs, the sauce is slightly salty and pairs perfectly with the pasta. 🐂 Tortellini di Manzo (Beef Tortellini “Knot of Love”) Tortellini is a traditional Italian pasta shaped like small stuffed parcels, typically filled with meat or vegetables. Compared to the bigoli, this dish is much lighter—almost like the opposite extreme. 🐖 Roasted Pork Shank (Stinco de Rorzelo al Rosmarino) The pork shank is braised until extremely tender—falling off the bone effortlessly. 🍹It has a good balance of lean and fatty meat, though it can be a bit salty on its own.
