๐บ๐ธ LA โ An Incredibly Unique French-Japanese-Thai Fusion Omakase โจ
One of the most special and surprising meals of my LA trip! This is the new collaboration menu from Michelin 1-star Sushi Kaneyoshi. When I heard it was a French + Japanese + Thai triple fusion, I came partly out of curiosity โ and honestly didnโt expect the flavors to work. But maybe because my expectations weren't too high, I ended up being pleasantly surprised course after course! Many dishes were excellent in both flavor and texture. Iโd recommend it to friends and would gladly return myself ๐ฝ๏ธ๐ ๐ Mini Burger โ Super cute! The bun is made with Japanese-style dough: soft, milky, slightly sweet. The tuna had a lovely grilled aroma and was super juicy with creamy sauce. I usually hate pickled ginger, but here it wasnโt spicy at all โ just slightly sweet and crisp. Loved it! ๐ฆ Snow Crab & Green Curry Rice โ Packed with snow crab meat, layered over green curry rice, with a crispy shell for texture and lime zest on top. Possibly my favorite Japanese-Thai fusion dish of the night! ๐ฒ French Onion Soup + Chawanmushi โ Top layer: French onion soup. Bottom: Japanese steamed egg custard. Generous chunks of tender chicken thigh, mushrooms, and veggies. A bit salty as a soup course, but the two styles blended surprisingly well. ๐ Grilled Mackerel โ More special than other grilled fish courses! Topped with crispy burdock root (โgoboโ), paired with tender, juicy fish and a lightly savory purรฉe โ great textural contrast. ๐ฆ Duck Breast โ Personally found it just okay, but was amused to see it served with Chinese broccoli stir-fried in duck fat! ๐ Japanese Broth Nodle with Half-Cooked Tilefish โ The fish was soft and fresh, the noodles had wonderful bounce and wheat aroma โ impressive for thin noodles! ๐ง First Dessert: Thai Tea Granita โ Topped with lemon foam, hiding Thai tea-flavored ice and lemon jelly underneath. Strong tea flavor, refreshing and tangy-sweet. ๐ฎ Second Dessert: Crรจme Caramel โ Looked simple but surprised me! Unlike overly sweet American caramel, this sauce was barely sweet with a hint of bitter char, balancing perfectly with the eggy, lightly sweet custard. Almond crisps added nice crunch (though a bit sweet). ๐ Chefโs Gift โ A homemade matcha red bean cake + a handwritten card in three languages from both chefs.
