🇺🇸 LA Dinner | République 🇫🇷

During my trip to Los Angeles, I enjoyed a French dinner at République. The dishes were generally good — some hits, some misses — served in a classically elegant setting with warm and attentive service. Though seated at the bar with less-than-ideal lighting (my excuse for no food pics 😉), the experience was memorable. We started with three one-bite appetizers: 🐟 Bluefin Tuna Tartare on a warm, crispy baguette slice, topped with savory caviar. The bread was fragrant and comforting. 🦆 Duck Liver Tart was a bit salty but rich and smooth, with a beautifully flaky crust. 🐌 Burgundy Escargot served in a puff pastry cup — tender snails bathed in herb butter were poured into the pastry and eaten in one delicious bite. Each showcased French pastry at its finest: baguette, tart shell, and puff pastry — all executed perfectly. For the main, we tried the Duck Two Ways 🦆: 🍗 Confit leg with crackling-thin skin and tender, falling-off-the-bone meat. 🍖 Seared breast, evenly cooked with a crisp skin and juicy interior. 🍑 The surprise star? A slow-roasted yellow peach — sweet, plump, and bursting with juice — that offered a refreshing balance to the rich duck. It was a peach revelation! 🍰 Dessert: Peach Tart with thin peach slices and flawless buttery pastry, topped with pistachio ice cream. The contrast of warm pastry and cool, nutty ice cream was a perfect finale. I learned from the bartender that their pastry chef is a James Beard Award nominee — and it shows. While some savory dishes varied, every pastry element was exceptional.
