A Bite of Gold Leaf! Hatsuyuki Handroll Bar
🥧Located in Fort Worth, this handroll bar only has a counter-like seating arrangement (about 30 single seats) with the chef busily preparing the food in the center. The dining experience is similar to omakase, where dishes are served one at a time. There are two menus: one is a double-sided printout, mainly featuring various handroll combinations with drinks on the back; the other is a small blackboard on the left wall, listing premium ingredients and creatively designed nigiri, which is frequently updated based on the day’s offerings. 🍰The operating hours are generally from 11 a.m. to 2:30 p.m., and then again from 5 p.m. onwards. I visited on a Saturday at noon and waited for about half an hour. The handroll combo was of average quality; we ordered a variety of types, and the chef would split each one in half so we could taste different flavors. The chef even helped with plating and positioning when we wanted to take photos. As for the blackboard menu, if you have the budget, just go for it. 🌟 Unister When the chef was busily plating our dish, we didn’t realize it was ours. Finally, he picked up some gold leaf from a small box, and then it dawned on us. The combination of sea urchin and fish roe was incredibly fresh. With the addition of scallions and gold leaf, the presentation was much more visually appealing. 🌟 Scallop with Chopped Toro The scallop topped with toro and a small leaf was super cute. The meat was sweet, tender, and slightly spicy from the leaf. 🌟 Salmon Belly When we were almost full and about to finish, the chef strongly recommended this dish, saying it was a must-order at every table. He started slicing the fish and seared it briefly with a blowtorch. Since it was from the fish belly and had been seared, it was very fatty. The flavor was mainly the natural taste of the fish and the roasted fat. Perhaps because I was already full, I found it a bit greasy.
