Last night, I finally snagged a 9 PM reservation—honestly, this time slot isn’t ideal for French-style fine dining, especially with a 10-course tasting menu 🤣. But from the very first bite of uni and caviar, the freshness completely won me over. The meal began with King Crab × Kaluga Caviar × Coconut 🦀🥥, instantly setting the tone: refreshing, delicate, and brimming with oceanic elegance. Then came the Sungold Tomato "Sashimi" × Matsutake × Abalone 🍅🍄—arguably the most astonishing combination of the night. So clean, so pure... It felt like tasting clarity itself. ✨ What followed felt like poetic chapters dedicated to autumn: Hokkaido Scallop, Autumn Pumpkin with Striped Bass, and Smoked King Salmon 🍂🐟—each dish layered, refined, and never heavy.
