👍 A Must-try Liangpi (Cold Skin Noodle) | Chef Hong | Austin
🏅For various reasons, I've spent some time in several major cities in Texas and have tasted Liangpi (a type of cold skin noodle dish) both from restaurants and private chefs. But the Liangpi from Chef Hong's food truck on 24th Street in Austin has won my heart, and it's only $8.5. ‼️Since 2017, when they were still using a mini van to serve meals opposite the UT business school, I could eat two servings in one go. Back then, there were fewer ingredients inside, and I would always ask for no bean sprouts but extra cucumber. Later, when the owner started growing cucumbers at home, she began to put a lot of cucumber shreds in each serving. ✅How good is it? First, consider that this is a private chef who has built a business solely on selling Liangpi, evolving from a private chef to a food truck. This truck is located far from the UT campus and the Chinese community in Austin, yet the Liangpi is limited to 40 servings per day and almost always sells out. And it's closed on Sundays, Mondays, and Tuesdays... 😅The cucumber shreds in the Liangpi are freshly picked from their own garden. The chili oil is homemade and has the same flavor as the chili from Gansu, with a taste that is more fragrant than spicy. The sauce is rich in flavor but very refreshing, with garlic and vinegar that don't overpower, and sesame paste that doesn't stick to your mouth. The Liangpi itself is chewy and soft, absorbing the flavors well. Although some pieces are cut a bit thick, they don't feel heavy but rather smooth and refreshing.
