After arriving in Florence in the evening, I was eager to grab a meal near the train station. So, I walked into this pizza restaurant, which is about a 7-minute walk from the station. The place was quite busy, and without a reservation, we had to sit at the outdoor seating area. Fortunately, the weather was mild enough for an evening meal outside. This restaurant primarily specializes in pizza, with a few small desserts and appetizers (though the appetizers are also mostly related to pizza dough, so the carbs were a bit over the top⚠️). There were no pasta or steak options. I ordered a classic Margherita pizza🍕. To be honest, I had never had a proper Margherita pizza before and always thought that such a simple combination wouldn't be anything special. But being close to the "hometown" of Margherita (which actually originated in Naples), I felt compelled to try the authentic version. The ingredients and dough-making technique at this place were truly exceptional. It was the first time I experienced a pizza crust that was more delicious than the toppings! The puffed edges looked crispy but were actually soft and yielding to the touch. The slight charred aroma intensified the wheat flavor, making it both soft and chewy. This must be the result of using top-quality flour! The cheese in the Margherita pizza was very aromatic and not greasy at all. The tomato sauce was different from what I usually taste, with more pronounced acidity and saltiness and almost no sweetness. When the cheese was slightly melted, taking a big bite was really enjoyable. The other popular choice was the black truffle and tuna pizza🍕. The tuna was generous in quantity and not at all crumbled. The onions were marinated in advance, eliminating any pungency. The combination of black truffle and melted cheese created a rich, savory flavor that wasn't overwhelming even after two slices. I personally think this flavor is better balanced and more suitable for Chinese taste preferences. For the appetizer, I chose a pizza roll filled with a secret sauce and octopus🐙. It had the classic tomato sauce base, and the addition of other spices enhanced the overall flavor. I can't quite remember the exact names of the dishes on the menu, so you might need to match the descriptions on the English menu to find the corresponding items. Additionally, the menu notes that no adjustments to the flavors of any dishes are accepted, which suggests that this is a restaurant that sticks to its principles.
