A Vietnamese Street Food Pop-Up From The ‘Mother of Fusion Cuisine’ Is Headed To L.A. For 12 Days Only

Vietnamese street food is headed to Beverly Hills in a new, limited-time pop-up! Crustacean Beverly Hills is celebrating the 50-year legacy of Chef Helene An with the return of Little C, a [pop-up](https://secretlosangeles.com/happy-gilmore-2-restaurant-pop-up-one-day-only/) lunch series described as intimate and deeply personal. “Guests will discover a soulful reimagining of traditional Vietnamese street food through cherished family recipes,” reads the press release. The menu includes iconic Vietnamese dishes with a twist , including Gui Cuon rolls of the day, Ahn Nhau bites, a Goi Salad, and filet mignon pho with a broth that’s been simmering for 24 hours. The Banh Xeo bar allows guests to fill a savory turmeric crepe with their choice of jirdori chicken and prawn or escargo and wagyu. Mama’s Mood of the Day is also on the menu, which will be a different dish every day for guests to try. Alcoholic beverages, Vietnamese iced coffee, and more drinks are also on the lunch menu. According to Crustacean Beverly Hills’ website, “Master Chef Helene An is heralded as the Mother of Fusion cuisine and was recognized by the Smithsonian Museum with a Pioneer Award in Culinary Arts as the first to introduce Vietnamese cuisine to mainstream America.” The Little C pop-up also marks the 30th anniversary of the restaurant – and the beginning of a new chapter. Elizabeth An, co-owner of the restaurant, tells *Secret Los Angeles* that the establishment’s lease is ending in the next year and they’ve begun scouting for new locations around L.A. There might also be a rebrand in the restaurant’s future. Little C, the name of the street food pop-up, is being considered for the new storefront.
