One of these is a place I still crave from time to time. 🌮 Blackbelly Market A meat-focused American restaurant where you’re greeted by a glass-walled meat locker 🥩. Most ingredients come from local Boulder farms — all Colorado-raised beef and lamb. Must-try: Crispy Pig Ear: Thinly sliced, deep-fried, super crunchy and not greasy at all 👂🔥 Grilled Octopus with Squash: Fresh and light with seasonal veggies 🐙🎃 Local Lamb Entree: Tender, not gamey, perfectly cooked 🐑💫 The whole experience is relaxed yet satisfying — meat done right, balanced with clean, veggie-forward sides. 🌯 T/ACO — An Urban Taquería A cool taco spot with creative fillings and vibes. I used to dislike tacos (blame the bland shells!), but this place changed my mind. My regular orders: Pork Belly: Rich, tender, deeply flavorful — a bit oily but so worth it 🐖❤️ Steak with Avocado Crema: Savory and satisfying 🥑🥩 Carnitas with Pineapple: Refreshing and sweet — great for pineapple lovers 🍍🐖 Chips & Dip: Their tortilla chips are dangerously good. I pair them with guacamole and a tangy tomato-onion salsa 🥑🍅. ⚠️ Heads-up: Skip the duck and snapper tacos — duck can be funky, snapper isn’t always fresh. 🍛 The Med A Mediterranean gem mixing Greek, Spanish, and Italian flavors. They had amazing small plates — baked meatballs, pork belly rolls, roasted beets 🧆🍖. My favorite was the Spanish Paella — so flavorful and memorable 😭❤️. Sadly, after 20+ years in Boulder, it didn’t survive the pandemic and has closed permanently. This one’s for you, Med.
