Back when I was in Boston, I thought Texas Roadhouse was the peak of barbecue happiness — though honestly, I was probably more obsessed with their free honey butter rolls than the meat itself 😅. But here in Texas, it’s time for the real deal. So I headed to the legendary Hutchins BBQ — and of course, on a weekend evening, the line was out the door. We waited about 30 minutes before getting inside, where the setup felt like a barbecue cafeteria: you pick your meat, move along the counter, pay, then hunt for a table. Fun and no-frills! Just before the counter, the guy in Photo 4 was slicing samples — he looked hot, tired, and a little over it, but hey, free tastes! We’d done our homework, so we ordered the Brisket (half lean / half fatty). The server gave us a “you know what’s good” nod 😂. We also lucked out and scored the last Beef Rib of the night and the famous Texas Twinkle 🌶️. 🥩 The Meat Breakdown 🔥 Brisket – Juicy, smoky, with that perfect bark. The fatty half melts in your mouth; the lean still stays tender. 🔥 Beef Rib – HUGE and impressive, but honestly… more bone than meat. Tasty, but probably a one-time order for me. 🔥 Texas Twinkle – My favorite! A roasted jalapeño stuffed with bacon, cheese, and shredded beef. One is amazing — two would be too much. Salty, creamy, smoky, spicy… it’s a flavor bomb 💥. 🥗 Sides & Sweets You can skip most sides unless you really want them — the meat is the star here. But as part of the dine-in deal, you get free dessert and ice cream (the soft serve tastes just like McDonald’s cone 🍦). I tried a bite of each dessert… and quickly retreated.
