What sets it apart from others is that it offers the latest reservation time slot at 9:30 PM, making it a great spot for late-night dining. š£ The Omakase consists of 17 courses. A deposit of $50 per person is required at the time of booking, which will be deducted from the total bill. The total cost is $165, plus a 22% service charge. š£ The sushi is of the modern, revamped style, with an array of fancy tools and a full-fledged presentation. The chef's script seems well-rehearsed (which is not a criticism), and each nigiri is introduced in detail. There are also nameplates for the main ingredients displayed in order on the wall, making it clear and straightforward. (This avoids the embarrassment of eating without knowing what you're having.) š£ Our chef was a Korean-mixed-heritage individual who chatted about various topics, even mentioning that he had learned Qigong from a Taiwanese master, which was quite interesting. š£ As for the food, freshness is a given at this price point. The choice of sauces and side dishes for each type of fish is well-balanced. The only issue is that the cuts of fish used are not the prime parts, likely to save costs, and there's a noticeable feeling of less desirable parts in the mouthfeel. š£ If you prefer a pure Japanese Omakase that highlights the natural flavors of the ingredients, you might want to look elsewhere. At established places like Uchi, the chefs have a deep understanding of fish and techniques, and they truly adjust to the diners' preferences, embodying the spirit of craftsmanship.
