Though the tables are placed quite close together, the clean, minimalist wood-toned decor still adds a nice touch. Service is attentive but not overbearing — plates get cleared promptly. The menu changes with the seasons, so apart from some classic staples, there’s always something new to discover. UNION’s version is firm, hearty, and chewy — smooth on the outside, not particularly springy in texture. You can see plenty of coarse black pepper, but the flavor is subtle at first, building as you chew — fragrant, then spicy.😊👍 The sauce is generous, creamy but not overly thick. Best of all — the salt level is perfectly controlled. Not too salty, letting the core flavors shine: the savory cheese and spicy pepper intertwine beautifully.🙌❤️ The only letdown was the soft-boiled egg — slightly overcooked. I love firm-textured pasta, and this earns a spot among LA’s best pasta dishes.❤️😒 The minced pork is tender and flavorful, sauce-to-noodle ratio is just right, and the coating is perfect — though there’s a touch too much olive oil. The ricotta is shaped into a lovely oval scoop — once mixed in, it enriches the sauce, adds creaminess, and never feels heavy.😂👌 First time trying fried rosemary — it really stands out, almost stealing the show.
