It has several branches locally, each with slightly different menus, and my favorite is the largest one on Mesa Street. Pushing the door open, the bright, clean space carries the familiar aroma of noodles, and through the transparent kitchen you can see the chef hand-pulling noodles—that stretching, swinging motion instantly pulls memories back to hometown streets 😌👨🍳. I’ve avoided spicy food for a long time and slowly can’t handle intense heat anymore, but every visit tempts me to order their Boiled Beef with Chili Oil 🌶️🐄. The beef slices are tender, bean sprouts crisp, the red oil fragrant—though I only dare take small bites, that memory still awakens taste bud nostalgia in an instant. Fortunately, there are plenty of non-spicy options: Scallion Pancakes pan-fried crispy outside, soft inside, rich with scallion aroma; Hand-Pulled Noodles chewy and springy, the broth light yet flavorful; Wide Belt Noodles are my favorite! Wide, slippery noodles coated in broth, wonderfully textured, so satisfying to slurp 😋. The only dish I haven’t quite adapted to is the Orange Chicken 🍊🐔. My teammate loves it, but I find the sauce too sweet—cloyingly sweet—perhaps better suited to American sweet-toothed preferences. Still, it doesn’t diminish my affection for this spot, especially since classics like Mapo Tofu Noodles (around $14) are solid and authentic: tender tofu, savory minced pork, mildly numbing and spicy—a bowl that warms both heart and stomach ❤️. Prices are friendly, and portions are astonishingly huge! Two people ordering two noodle bowls plus a side often leave with leftovers. Watching the chef busy in the bright kitchen, noodles flying through their hands, it strikes me: in a border town thousands of miles from home, being able to eat a bowl of hand-pulled noodles made fresh is already a gentle kind of luck.
