Hatsuyuki (First Snow) — The Best Nigiri in DFW?

🥓Last Sunday, I tried Hatsuyuki in Fort Worth for the first time. You really need to get in line half an hour before opening to be part of the first seating; otherwise, you’ll have to wait for an hour for the second round. We arrived at 11:30 a.m., and there were already more than ten people ahead of us. 🍣It’s not omakase, but you can still watch the chefs prepare the dishes by hand. The chef who made ours was of Asian descent, and there was also a Mexican chef. They offer a "today’s special" every day. The dining environment is quite nice, although the bar stools are a bit hard. 🐡The ingredients are all top-notch and very fresh. In picture four are some of my favorite dishes. The scallops are incredibly sweet and fresh. The salmon belly and black cod are also delicious, with a slightly charred aroma from the blowtorch. The sweet shrimp is good, though not quite as good as those at Sushi Sake. I personally didn’t like the eel roll; the seasoning was a bit too heavy. 🦪Overall, the food focuses on the natural flavors of the ingredients, with almost no cream or sauces added. I found it even better without soy sauce. It’s a bit of a pity that we didn’t get to try the foie gras, but I’ll give it a shot next time. The average cost per person was $110, and my husband didn’t feel particularly full. The only downside is that it’s a bit far from us.
