I can't believe Dallas has aged sashimi!

🍣Just opened a few weeks ago, this is my second time dining here. The aged sashimi is absolutely delicious. Compared to regular sashimi, it has a more tender, soft, and smooth texture. It feels like it melts in your mouth a bit, yet it still has a nice elasticity to it. It's not icy, watery, or sticky. There's no fishy taste at all. I recommend ordering it à la carte instead of going for the omakase. 🦐I had only seen aged sashimi online, but I actually got to try it today! Aged sashimi involves placing fresh fish in a controlled temperature and humidity environment to age for several days to weeks. When served, the dry outer layer is removed, leaving the tender interior (the fifth picture is of their fish storage cabinet). 🐚What's the difference between aged and fresh sashimi? I think fresh sashimi is chewier and more elastic (especially fish like amberjack), while aged sashimi is softer and more tender. I also had tuna bone marrow for the first time! It had a jelly-like texture and no fishy taste at all.
