This is honestly the best omakase I’ve ever had! From the food to the dining experience β€” truly full of surprises. The restaurant is tucked inside a small plaza, with a modest interior β€” nothing fancy. At first I wondered: Is this really Michelin one-star? But once the meal started β€” every single dish blew me away! A total of 14 nigiri, plus appetizers and dessert. My favorite: Golden Eye Snapper β€” lightly smoked with a touch of yuzu. In your mouth, the smoke, citrus, and fish just explode 🍣✨. The uni was also amazing β€” sweet, rich, incredibly fresh πŸ˜‹. The fourth photo shows my first time trying sushi with Japanese baby green onions + bonito flakes β€” surprisingly delicious! But the most mind-blowing part was the miso soup 🍲. The chef served it right after the green onion sushi, and β€” WOW. The miso was made by the chef last summer, simmered with fish bones β€” absolute perfection. I kept telling him how good it was, and he happily gave me a second bowl β€” so kind! This was my first time meeting such a friendly, talkative sushi chef. The more we chatted, the happier he got β€” and the fish slices got bigger and bigger πŸ˜‚. He has a unique, almost dance-like way of shaping sushi β€” you can feel his joy in the craft.πŸ’• He wakes up at 4:45 AM every day to handpick fish at the DTLA fish market because he prefers the traditional old-school style. Many others use suppliers, but he insists on controlling the quality himself.
