Irvine | Rebel Omakase – Michelin One Star ⭐
A newly awarded Michelin one-star omakase in 2024, located near Laguna Beach right by the sea. Arrived in the soft evening light and strolled over from the coast — already a serene start. The tableware and plating here are quite beautiful. The style leans modern fusion, not the traditional Edomae path. Varied formats, very high freshness — the chef shared that ingredients are flown in directly from Japan. Three standout dishes: 🦀 Kegani (Hairy Crab) — Satisfying for crab lovers who hate shelling. 🌊 Hokkaido Uni — Smooth, creamy, sweet. 🥩 A5 Wagyu — Lightly torched, with a gentle, aromatic richness. Out of the 19 courses, there were three types of sashimi and about 7–8 kinds of nigiri. By the later courses, it felt quite filling — to the point where the sushi practically turned into sashimi for me 🍣😅. After the meal, the restaurant takes a Polaroid photo as a keepsake and gifts a bottle of sake. Total dining time: around 2.5 hours.
