Joule | The best Korean fusion cuisine in Seattle 🍽️

Joule is really a delicious restaurant with a great atmosphere and decent service. It’s perfect for gatherings with friends or a date. When I went, it was packed with people, and there weren’t many Asian faces. It feels like a hidden gem that hasn’t been discovered yet 🍴. The restaurant is close to Gasworks Park, so you can take a walk there after eating. Beef Tartare: The raw beef tartare tastes pretty good. If you like raw beef, you should give it a try. Smoked Tofu: The smoked tofu with mushrooms is just okay for me. The smoky flavor is a bit too strong. Spicy Rice Cake: This is absolutely, incredibly delicious!!! You must order it! It’s the best rice cake I’ve ever had. It’s not the traditional Korean spicy rice cake flavor. It’s stir-fried with minced meat and pickled Chinese cabbage, which seems more suited to Chinese tastes. I always order two servings every time I go. The only downside is that the restaurant doesn’t serve rice. I can’t imagine how amazing it would be with rice 😭. Short Rib Steak: Although this steak comes with Korean hot sauce, I think it’s even better without it. It has the original beef flavor, but I find the chef’s understanding of doneness a bit odd. A medium-rare steak is cooked more like medium, and a medium steak is raw like a rare 😓. Kombu Cured Mackerel: This fish is rich in oil and very fragrant, but it’s not greasy at all when paired with green papaya. I have zero tolerance for fishy flavors, so I find it a bit fishy, but everyone else at the table thought this fish was delicious and aromatic. Charred Octopus: A large octopus tentacle with a great texture and chewy. The accompanying dishes are also very tasty. Joule Box: Even as someone who doesn’t usually like desserts, I found this so delicious. The pomelo, coated with a thin layer of sugar glaze, paired with the ice cream and sago below, is sour and sweet and super delicious.
