I’ve tried baking Basque cheesecake myself — always either underbaked and too runny, or overbaked and not flowy at all. I’ve also sampled many versions around town, but most are just soft in the middle, not truly flowing. Plus, 80–90% of them are overly burnt on top, leaving me scraping off the top layer just to enjoy the inside… But Olive & James nails it — consistently! I’ve been twice now, and both times: ✅ Perfectly golden top — not burnt ✅ Gorgeous, custardy flow in the center — not underbaked, but thick like a rich crème pâtissière ✅ Edges creamy and dense like New York cheesecake It’s pure cheesecake heaven! 🍵 And Their Matcha… I’m Obsessed! They recently launched a limited Ube version — and while the ube flavor is subtle, when mixed, it tastes like strong, aromatic soy milk!
