Providence has changed their menu! This time, every dish we tried β except the classic uni egg and salt-grilled prawn β was new and previously unseen on their menu. And honestly, it was even better than before! While the focus remains on fresh, delicately sweet seafood, the flavors now feel richer and more pronounced. π€π We specifically booked the private dining room overlooking the kitchen and noticed the kitchen is now led by a bearded head chef π¨π³π« π· Drink Recommendations: Wine pairing is a must here β my favorite is still Salon Champagne. The 2007 vintage was exquisite; as the bubbles settled, it developed almost a white wine-like depth. Knowing weβd be having wagyu and duck, we also added a 2014 RomanΓ©e-Saint-Vivant.
