Just had a solo meal at Inaba! I was craving it so badly—managed to snag a single seat last minute, and wow, dining alone here turned out to be such a unique and enjoyable experience! I walked into the quiet restaurant, settled down, and was about to start taking photos with my small camera when the chef suddenly asked, “Would you like a ring light?” Now, let’s talk about the food 🥘—this meal totally hit all my favorite notes! Started with the classic uni saba—forever love! The clear, subtly sweet broth paired with fresh, creamy sea urchin was so delightful, it almost felt like dessert 🍧. Yet the aftertaste was explosively umami! Another standout appetizer was the sake-cured bonito. Here’s a funny story: Two ladies next to me found every course from the first sake pairing too “salty.” Whether it was the sake-marinated anglerfish liver or the bonito, to me, the umami flavor outweighed the saltiness 🧂. The richness spread from the back of the tongue rather than hitting the tip sharply—that’s umami explosion, not salt overload! But hey, everyone’s palate is different—I respect that!
