The nori tastes surprisingly like the popular Thai sea rolls. 🌟Wagyu & Uni Tartare I think this was the best dish of the night! The sea urchin was incredibly sweet and glutinous, likely from Japan. The beef was very fresh, seasoned with chopped celery and sesame oil. It was served with hash browns instead of bread, but the potatoes were a bit oily and salty, which detracted from the overall dish. 🌟Whiteleg King Prawn Fried prawn tempura taco with avocado and white pickled cabbage. The prawns tasted like they were freshly caught, with a firm and slightly sweet texture. The tempura batter was a bit salty, and the pickled cabbage didn't stand out much. 🌟Red Abalone Abalone risotto made with barley, giving it a Japanese feel. The foam was made from white pickled cabbage juice. Garnished with sea vegetables, the risotto had a creamy texture that would have paired well with truffle (unfortunately, it was not available that day). The abalone was chewy and not tough at all. 🌟Mt. Lassen Trout This dish took a long time to arrive, and by the time the trout was served, it was cold.
