Once you’ve explored enough omakase, you start looking beyond the traditional courses — so when a friend invited me to their exclusive silver-skinned fish night, I couldn’t resist. We savored 24 courses in total — left beyond satisfied. This was only the second silver-skinned fish night since Kaneyoshi opened. I’ve never been a fan of silver-skinned fish, but my friend assured me their preparation was exceptional. With the season winding down and a new year ahead, I decided to challenge my palate — and what a delightful surprise it was! My preconceptions about this category completely melted away. Price was around $300 per person + sake + tip ≈ $640 each (for reference). We tasted fish aged 4, 5, and 7 days — each with distinct character. Highlights: Potato salad with fish and smelt roe — unexpected and texturally brilliant. Japanese sardine roll — refreshing, paired beautifully with Iwa sake. The chef’s secret shrimp powder eliminated any fishiness — like magic! ✨ Pompano presented two ways: as a starter with shiso blossom, and later as nigiri — completely different experiences. The “Carmen Roll” (a friend’s inside nickname) blended monkfish liver with rice and cucumber — rich yet bright. Even the bonus tofu roll was impressive. A whole night of silver-skinned fish could easily become monotonous, but the chef’s pairing skills shone through every course. If you ever get the chance — join a silver-skinned fish night. It’s a perfect long-weekend experience. As the weather warms, these fish become less fatty, so the next event likely won’t be until November.
