Itβs been a whole season since I last saw Chef Ken β and Iβve been dreaming of this meal ever since. Caught the tail end of spring with a menu full of seasonal ingredients, like sea greens with almost no oceanic taste β a surprisingly fresh texture. Total for two: $330 ($165 each) + sake + tip β $500 β worth every penny. The white fish wrapped around uni was heavenly β didnβt mask the uniβs sweetness, just added a tender, soft layer. Got spoiled with a Western-style clam dish as a drinking snack πΆ, and even tried delicate white strawberries flown in from Japan! Since I donβt love silver-skinned fish, the kohada came as a hand roll with two kinds of seasoning β clever and tasty. Both cuts of tuna were so rich β even the chu-toro felt like otoro!
